Celebrate Hispanic Heritage Month with 3 Tasty Recipes

Hispanic Heritage Month is Sept 15 through Oct 15 and what better way to celebrate and appreciate this diverse culture with some specialty dishes. From enchiladas to Mexican rice, queso, nachos, and more, we’ve got you covered! 

Check out some delicious dishes that are sure to satisfy your palate! 

Multi-layered Enchilada Casserole 

You cannot go wrong with a layered enchilada. While it is not the traditional rolled enchilada, this one is much easier to make and you can really get the most out of each layer. 

Ingredients: 

  • Two packs of corn tortillas 
  • 2-3 cans of red enchilada sauce (the El Paso brand is my favorite, but you can opt for whichever) 
  • 2 chopped yellow onions
  • 2 chopped bell peppers 
  • Shredded chicken (I tend to use a ready-made rotisserie for time sake) 
  • Green onion and cilantro for garnish 

Directions:

  1. Preheat the oven to 350 degrees F. 
  2. Get a casserole dish and line it with non-stick cooking spray, parchment paper, or tin foil 
  3. You will work layer by layer. Soak your corn tortillas in the red enchilada sauce, making sure to cover both sides (I like to drench mine for extra flavor) 
  4. Start your first layer with the soaked tortillas. 
  5. Next, evenly distribute your shredded chicken, onion, and bell pepper chops 
  6. Sprinkle in a generous amount of cheese as well 
  7. Now, you are ready to move on to the next layer. Repeat the 3-step process of tortillas, fixtures, and cheese until you have reached the top of your dish. 
  8. The last layer should top with your soaked tortillas. Add cheese and some green onion and cilantro for garnish! 

Flavor blasting Spanish Rice 

The perfect side dish for your enchiladas. Find the recipe below! 

Ingredients:

  • 1 cup of Jasmine rice 
  • Sazon seasoning “cilantro y tomate” flavor
  • 1 onion 
  • 1 can of Rotel 
  • Cilantro 

Directions 

  1. Set the stove to a medium-high temperature 
  2. Put your white rice in with olive oil and cook the rice until it has browned 
  3. While the rice is browning, add in some onion to cook with it
  4. On the side, boil 1 cup of water and add in your Sazon seasoning packet 
  5. Once the water has boiled, add it into the rice with 1 can of Rotel and cilantro 
  6. Cook for about 10 minutes on medium-high (do not stir the rice while it is cooking) 
  7. When the rice is cooked, take it off the hot burner and place it elsewhere. If left on the heat, it will continue to cook risking overcooked rice. 

Gooey nachos with Queso 

What is Hispanic Heritage month without food such as chips and queso! This is an appetizer must before your delicious meal.

Ingredients

  • A bag of baby cherry tomatoes
  • 1 onion
  • 16oz. Pack of Velveeta Cheese 
  • 1lb of ground beef
  • 1 package of taco seasoning
  • ½ cup of milk
  • Red pepper flakes
  • Salt & pepper
  • Garlic Powder 
  • Cilantro 

Directions

  1. Set stove at medium-high heat and use a skillet pan to brown your ground beef 
  2. While your beef is cooking, chop cherry tomatoes and onions on the side ensuring there is an equal amount of both ingredients 
  3. Once your ground beef is halfway cooked, add in the entire pack of taco seasoning 
  4. Let the meat and taco seasoning cook completely
  5. Add in your cherry tomatoes and onions. Let those cook for a bit. 
  6. Now, chop your Velveeta cheese into sections so it cooks easier.  
  7. Add in your Velveeta and ½ cup of milk
  8. Add in as much red pepper flakes, salt and pepper, garlic powder and cilantro as you want 
  9. Let all the ingredients cook and simmer in the skillet for about 10 minutes 
  10. Serve with tortilla chips
